Meal prepping is a wonderful way to save time, eat healthy and make sure you are getting the right nutrients for your body. This is especially true for vegan eating, which can be challenging to get right on a busy schedule. That is why I decided to try my hand at creating a weekly vegan Asian meal prep – and it has been amazing!
Each week starts with me planning out the recipes I will be making and gathering all my ingredients from the store or local farmersโ market. These include things like tofu & tempeh, rice & noodles, various spices & sauces as well as lots of fresh veggies like broccoli, cauliflower, and Bok choy.
Once I have everything ready to go, I begin cooking in batches so that each meal takes only minutes to throw together later in the week when needed. For example, I might make some teriyaki tofu stir fry one day which will last me until Friday morning before needing another quick reheat.
It has been remarkable how little effort goes into my meal prepping once everything is prepped and cooked (it usually only takes about 2 hours total!). Not only do I save tons of money by not eating out but also time since now all that is left for me to do during breakfast/lunch/dinner times is quickly heat food up in the microwave or stovetop!
Overall if you are looking for ways to make vegan eating easier then definitely try out this approach- it has made such a difference in my life not just physically but mentally too since now every single day I get delicious meals without fail!
